Content: Folios 42-43. Letter from Colonel W T Wade to the Poor Law Commission on the subject of waste in cooking, and informing them that the meat supplied to the Bishops Stortford Poor Law Union Workhouse consists of 'clods of slickings free from bone'. Annotated: that meat without the bone, if properly cooked, should not lose more than one fifth or one sixth of its weight. Hot bread may lose four or five [lbs] by evaporation or even 8 to 10 [lbs]. Also that this information has been obtained from an appropriate source, but that the Commission does not guarantee its correctness. Paper Number: 2397/A/1838. Poor Law Union Number 167.
